THE NAME
To give one’s own surname to a wine is not always easy, but Dettori can describe the life my family has always been living.
HOW IT COMES OUT
Dettori is the archaic Cannonau of Sardinia. A kind of wine that everyone (.....almost everyone) had forgotten, when choosing wines which were simpler to drink and also to sell. Drinking Dettori is like making a study of anthropology.
It is not always easy to obtain, as it needs a late harvest, to maintain a non-low natural acidity and to avoid volatile acidity degenerate.
HOW TO DRINK IT
We recommend to drink it at 13/15°C, after oxigenation. Try to follow its oxidative evolution.
It well accompanies hard cheeses. Silent and friendly during contemplation. All our wines need time, once opened, to express themselves.

Big and with a tulip shape.
WARNING
Give to the bottle time to rest after the shipping. The wine was not clarified, filtered or stabilized. Probable remaining are natural.
PRODUCTION PROCESS
The grapes were hand-harvested and as always transported in boxes inside our Refrigerated Truck.
The grapes were only de-stemmed and left to macerate for ten days at a controlled temperature. Decantation and maceration took place in small cement tanks until bottling in the month of May/ June. The wine was not clarified, filtered or stabilized. Hand bottled. Once bottled the wine is left to ripen in a cellar with a strictly controlled temperature.
