HOW IT COMES OUT
I heve never been fond of muscat wines which are too “full”, sugary and too sweet.
I prefer working on refinement and elegance. That is, lightness. For this reason we decided to process grapes in advance. An unusual Moscato, as I like it.
HOW TO DRINK IT
We recommend to drink it around 12°C. All our wines require time, after they are opened, to express themselves.
Excellent accompanying uncooked seafood and with grilled lobsters.
GLASS
Big and with a tulip shape.
WARNING
Give to the bottle time to rest after the shipping. The wine was not clarified, filtered or stabilized. Probable remainings are natural.
PRODUCTION PROCESS
The grapes were hand-harvested and as always transported in boxes inside our Refrigerated Truck.
The grapes were only de-stemmed and left to macerate for ten days at a controlled temperature. Decantation and maceration took place in small cement tanks until bottling in the month of May/June. The wine was not clarified, filtered or stabilized. Hand bottled. Once bottled the wine is left to ripen in a cellar with a strictly controlled temperature.
